Oil, frying, and the point where flavor rises and your gut sinks

Olive oil on a salad sounds healthy. The same oil in a deep pan around a patty sounds like a sin. The body does not read morality. It reads how much fat arrived at once, whether the stomach slowed, and whether heartburn or an urgent bowel movement followed. For some people with IBS or sensitivity to fat, the amount matters more than the oil's name.

What happens after the pan

Fat delays stomach emptying. Food that stays in the upper digestive tract feels heavy, sometimes causing heartburn when you lie down. Lower down, in other people, it speeds things up. Two people can therefore leave the same restaurant with two different stories, neither invented. Deep frying also adds a coating that absorbs more. Baking with a little oil is not the same dish, even if it has the same name.

Home cooking that still tastes good

A hot pan, a measuring spoon, not "by eye" when your eyes are tired. Blot fried food from outside on paper. Cream-based sauces stay on the side, not mixed in before you test your reaction. One day with a dish like this, not three. If you eat schnitzel every evening because the children do, eat half and fill the rest of the plate with rice or potato. Not heroics. Proportion.

Olive oil does not get an exemption. It is still fat. It is simply convenient for quick cooking and salads. Anyone who reacts to quantity will react to it too if they pour it on.

A restaurant

Ask whether baking or grilling is possible. If not, eat less of the fried dish and more of the simple side, provided the side is not soaked in the same oil. Fries beside a fried dish mean the same ingredient twice. It looks like a side. It acts like a continuation.

Yesterday's oil

A fried dish reheated the next day is usually even heavier, and its oil has been heated twice. If sensitive to fat, reheat in the oven rather than a pan, or save fried food for the day it is fresh. Quantity also matters: many people tolerate half a fried portion alongside a simple base better than a whole portion.

Spicy and fried, together

The most familiar combination is also the most challenging: oil and pepper in the same bite. Each might be fine alone. Together, they double the burden. If testing what troubles you, separate them and test one at a time. We wrote about spicy food in spicy food: your stomach remembers even when your mouth asks for more.

At a restaurant, fried food often arrives even when you did not order it: fries on the side, a crispy coating, fried onion on top. You can request a different side. We wrote about the one question worth asking your server in ordering at a restaurant when your stomach controls admission.

When fat is not the issue

Sharp pain after every fatty meal, especially in the upper right abdomen, or yellowing, requires a doctor, not another experiment with the pan. Gallstones say hello at exactly these meals. Attributing everything to IBS without an examination is how you miss a different story.
